Indonesian ondeh ondeh

We’re making indonesian ondeh ondeh! Fried glutinous rice balls with a sweet filling, coated with sesame seeds on the outside and then fried.

Filling
Peeled green beans 250g
Gula Melaka 100g
Salt 1 pinch

Put everything into a pot and add just enough water to cover. Bring to boil and simmer for about and hour, stirring all the while and adding more water as necessary. Beans should turn soft and paste like. Chill and shape into balls 2tsp in size.

Mashed potato 180
Tapioca flour 600
Warm water 600
Coconut cream 100
Salt 2 pinch

Pass potato through drive to ensure it is fine. Combine water, salt and cream.

Add liquid a little at a time to potato and flour until a stiff but pliable dough is formed.
